I hope that you all had a great weekend! We were really quite here and I slept a lot and am trying to shake off a February virus that is trying to take me down. I can think of no better place to ditch it for good than Mexico where I am headed in a couple days (I am SO excited!)
But in the meantime, we have a little holiday to celebrate! Valentines Day is tomorrow and the girls are pumped up. We spent half the weekend making the cutest Valentines for their classes and I am in charge of bring the art project to Coco’s class. There will also be baking homemade treats and a wonderful dinner on Tuesday night. What are you guys doing?
But Tuesday morning is going to be waffle time!! I am making these gorgeous Coconut Waffles with Raspberry Sauce. They are SO GOOD you guys. The waffles bake up so golden and fluffy and delicious and that raspberry sauce is everything- the perfect combination of flavors plus it’s a gorgeous festive color perfect for Valentines Day!
Also you guys, join me on Tuesday at 11am where I am going to show you how to make a 3 course Valentines Day dinner in 30 minutes!! See you then!
- Coconut Waffles
- 1 cup unsweetened coconut milk
- 1 tablespoon apple cider vinegar
- 2 cups gluten free all-purpose flour
- ¼ cup sugar
- ½ cup toasted unsweetened shredded coconut
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- ¼ cup coconut oil
- ½ cup gluten free beer
- Raspberry Sauce
- 2 cups frozen raspberries
- ¼ cup sugar
- 2 teaspoons lemon juice
- Preheat a waffle iron.
- In a bowl, combine the coconut milk and vinegar and set it aside.
- In the bowl of a standing mixer, combine all of the dry ingredients and then whisk in the coconut milk and the coconut oil and beat until you have a smooth batter (studded with the coconut).
- Spray the waffle iron with coconut oil spray and spoon the batter into the hot waffle iron and cook until golden brown, about 3 minutes. Transfer to a plate and serve hot with hot raspberry sauce. (Or keep the waffles warm in a 300 degree oven until ready to serve.)
- For the Raspberry Sauce:
- In a small saucepan add the frozen raspberries, sugar and lemon juice and bring to a simmer while breaking up with a fork until you have a sauce and the sugar has dissolved.

So many people have gotten a really nasty virus in the last few weeks! Just getting over it myself! I’m glad you are feeling better! This is definitely a recipe for a great brunch!
Thank you! Def making these this week! What’s with the gluten free beer? Where does that fit in the recipe?
wondering the same!
ABsoluetly you can freeze this!
Should the second 1/4 cup coconut milk listed in the ingredients be coconut oil? It reads to add coconut oil in the directions but I don’t see it in the ingredient list.
Thank you Nancy- I will fix this asap!!
I would love to wake up to a meal like this on Valentine’s Day!
